There are 5 different mini bosses in Breath Of The Wild. These consist of the Stalnox, Hinox, Lynel, Talus and Molduga. The numbers of each vary.
Hinox

Hinoxes are probably going to be the first or second mini boss you will stumble across in Breath Of The Wild. They are extremly common with 40 of them across Hyrule. There are 3 types, blue (the lowest), red (the middle), and black (the strongest). They're drops aren't very helpful, but some of them can have strong weapons hanging off of their neck, which can be very useful at the start.
How to defeat
Defeating a hinox is pretty simple. All you need to do is hit them in the eye with an arrow,then they will sit down. Pulll out your sword and start hittin them, and when they stand up, hit them in the eye again, and when they sit down, smack em with your sword. Eventually they will begin to hold their eye. Lead them to a tree, and they will pick it up. Then you can hit them in the eye again and finally defeat them!

Now Taluses get interesting. There are 3 types. There is Igneo Talus, Frost Talus and Stone Talus. Stone Taluses you probably see on your regular journey, but Igneo Taluses are found in the Eldin region near Goron city and Death Mountain. Frost Taluses can be found in the Gerudo Highlands and the Hebra region. There are 40 Taluses in total, including Frost , Igneo and Stone. They drop many minerals, but nothing very useful.
How to defeat
Taluses have a weak spot that you can hit to deal damage to the Talus. It can be on the top of the Talus, so you would have to climb ontop of the Talus, or it can be on the back of the Talus, which make spears extremly useful against the Talus, as it's the only weapon that can efectivly deal damage. Now if you don't have the Flamebreaker armor upgraded twice at the very fountain, Igneo Taluses will instantly burn you up. If you don't have the Snowquill armor upgraded twice at the Fairy Fountain, Frost Taluses will freeze you. To over come this, you need to hit the talus twice with a weapon or an arrow of the opposite element (freeze arrows or frostblade for Igneo, fire arrows or flameblades for Frost). But watch out! The Taluses can regenerate their flare or frost!

Stalnox
A skeleton version of the Hinox. You can only find them at night, except for the one in Hyrule Castle where you get the Hylian Shield (more in the weaponry section). There are 10 Stalnoxes across Hyrule, and they drop a few weapons and Hinox parts, but nothing special. They are pretty rare.
How to defeat
You defeat the same as you would as a Hinox, hitting the eyeball with an arrow, then hitting it with your weapon. Once the stalnox reaches dangerously low health, it's eyeball will fall onto the floor, then you just have to hit it and defeat it.
